Lemon Sour Cream Cake

Simple and moist cake

Ingredients

125g softened butter

2 teaspoons grated lemon rind

1 cup sugar

3 eggs

1 cup plain flour

1 teaspoon baking powder

1/2 cup sour cream

icing sugar (to dust on top)

Directions

Beat butter (125g) lemon rind (2 tsp) sugar (1 cup) eggs (3x) together until light and fluffy

Sift flour (1 cup) and baking powder (1sp) together. Fold sifted ingredients into egg mixture alternatively with sour cream (1/2 cup) and mix until smooth.

Pour into a greased tin (20cm round) and bake at 160C for 45mins or until cake springs back when lightly touched.

Leave in tin 5-10 mins before turning out onto a wire rack. When cold dust with sugar.
